SHIITAKE SLAW

The Rice Diet Solution by Kitty Gurkin Rosati, Robert Rosati

Coleslaw with a twist!
Yield: 3 servings (1 cup per serving)



Ingredients
• 1 teaspoon extra virgin olive oil
• 1 tablespoon garlic, minced
• 1 1/4 cups shiitake mushrooms, stems removed and julienned
• 1 teaspoon dry mustard
• 1 teaspoon dill
• 3 cups red cabbage, julienned
• 1/4 cup red onion, diced
• 1/4 cup white wine vinegar
• 1 teaspoon black pepper


Directions
In a small pot, saute garlic and mushrooms in olive oil over low-medium heat until lightly browned.

Add 1/4 cup water, mustard, and dill, and saute 2 to 3 minutes.
Cover and remove from heat.

Combine cabbage, onion, and vinegar in a mixing bowl.

Stir in mushroom saute and black pepper.

Refrigerate at least 1 hour before serving.
