SWEET POTATO BROCCOLI CREAM DIP

Makes 2 Cups.
 

Ingredients

    • 1/2 cup broccoli, chopped
    • 1 cup sweet potato, peeled, and cubed
    • 1 cup silken tofu
    • 1/2 cup tahini
    • 4 tablespoons tamari
    • 1 tablespoon scallions, chopped
    • 1/4 teaspoon black pepper, freshly ground
     

Directions

1. Steam broccoli 2-4 minutes.

2. Boil sweet potato until tender, about 20 minutes.

3. In a blender or food processor, combine broccoli, sweet potato, tofu, tahini, tamari, scallions, and black pepper, and process until smooth.

4. Serve cold with crackers or pita bread.
