SOUR CREAM RICE DIP
Yield: Makes 12 servings.
• 3 cups cooked rice • 1 4.5-ounce can diced green chiles • 2 cups sour cream • 1/4 cup butter or margarine, melted • 1 teaspoon salt • 1/2 teaspoon black pepper • 2 cups shredded Monterey Jack cheese
In medium bowl, combine rice, chiles, sour cream, butter, salt, black pepper and cheese. Pour rice mixture into lightly buttered 2-quart microwave safe casserole dish.
Cover and microwave on high 7 to 10 minutes until cheese is melted and heated through, stirring every 2 minutes.
Serve with tortilla chips.
