SHRIMP BUTTER

The Silver Spoon, Phaidon Press

For canapes or crostini.


Ingredients

• 7 tablespoons butter, softened
• scant 1 cup peeled, cooked shrimp, finely chopped
• salt and white pepper


Directions

Cream the butter in a bowl, then beat in the shrimp and season with salt and pepper.
