MANGO BUTTER

INGREDIENTS

1 Pound  Butter

1 3/4 Cups  Mango -- 1/4" dice
1/4 Cup  Green Onion -- diced fine
1/4 Cup  Fresh Ground Black Pepper


Whip Butter in mixer bowl and whip to a soft texture, so other ingredients can be folded in.

When Butter is whipped, fold in the remaining ingredients gently.

Roll butter up in greaseproof paper (parchment or wax paper), and roll into 1 ¾ inch roll.

Refrigerate at least 1 ½ hours before using.


NOTES : Use Mango that is barely ripe - do not use overripe Mango.

SERVING SUGGESTIONS: A GOOD SAUCE FOR GRILLED FISH
