FENNEL BUTTER

For meat or broiled fish.
Ingredients • 1 garlic clove • 7 tablespoons butter, softened • 2 teaspoons fennel seeds • juice of 1/2 lemon, strained • white pepper
Directions
Blanch the garlic in a small pan of boiling water for about 1 minute, then drain, peel and mash well with a fork.
Cream the butter in a bowl and beat in the garlic.
Grind the fennel seeds in a mortar with a pestle or in a spice grinder and beat into the butter.
Beat in the lemon juice and a pinch of white pepper.
