The Silver Spoon, Phaidon Press

• 7 tablespoons butter, diced
• 1 large bunch of fresh basil, leaves torn into pieces
• 2-3 tablespoons lemon juice, strained
• salt and pepper


Place the butter in the top of a double boiler or in a heatproof bowl and melt over barely simmering water.

Remove the pan from the heat, whisk in the basil and lemon juice and season with salt and pepper,
