MAITRE D'HOTEL BUTTER

The Silver Spoon, Phaidon Press

For steaks, scallops or poached fish


Ingredients
• 7 tablespoons butter softened
• 1 tablespoon chopped fresh flat-leaf parsley
• lemon juice, strained, to taste
• salt and pepper


Directions

Cream the butter in a bowl, then beat in the parsley some salt, very little pepper and a few drops of lemon juice.

Make into a roll and wrap in foil.

Chill in the refrigerator until set.

Cut into slices to serve
