The Silver Spoon, Phaidon PressFor steaks, scallops or poached fishIngredients• 7 tablespoons butter softened• 1 tablespoon chopped fresh flat-leaf parsley• lemon juice, strained, to taste• salt and pepperDirectionsCream the butter in a bowl, then beat in the parsley some salt, very little pepper and a few drops of lemon juice. Make into a roll and wrap in foil. Chill in the refrigerator until set. Cut into slices to serve
