MASHED POTATO HORSERADISH PIE

Number of Servings: 6+

6 Large Potatoes
1/2 Cup Chopped carrots
1/2 Cup Chopped celery
3 Tbsp. Prepared horseradish
1 Ready-made piecrust
1 8-Oz. Package cream cheese
6 Tbsp. Butter
1/4 Cup Mayonnaise
Salt & pepper


Line deep pie plate with one of the piecrusts.

Boil and mash potatoes, adding salt, pepper and butter to taste.

Beat cream cheese into potatoes to make them extra creamy. Set aside.

Next, mix together carrots, celery, mayonnaise and horseradish.

Line the bottom of the pie with the horseradish mixture.

Layer creamy mashed potatoes on top of horseradish mixture.

Finish by sealing the other piecrust over the top.

Bake for 1 hour, covered at 350º.
