MARINATED GOAT CHEESE CROSTINIS

Winner of 2003 Crisco® Well-Oiled Kitchen Recipe Contest
Recipe by Lisa Key, Middlebury, Connecticut

Yield: 24 servings


12 ounce log soft goat cheese
1/2 cup Crisco Oil, divided
2 cloves minced garlic
2 tablespoons minced ginger
1/4 cup chopped basil
1 teaspoon grated orange zest
1/8 teaspoon ground allspice
24 thin slices of French bread
1/2 teaspoon ground black pepper


Slice goat cheese into 1/2-inch thick slices; arrange in a single layer in glass baking dish.

In small saucepan, heat 1/4 cup Crisco oil over medium-high heat for 2 minutes or until hot.
Remove pan from heat and immediately add garlic, ginger, basil, zest, and allspice; stir well.
Pour oil mixture over goat cheese.
Cover with plastic wrap and marinate at least 3 hours or for as long as 1 week. Meanwhile, heat oven to 350ºF.

Brush both sides of bread with remaining Crisco oil; place on a baking sheet.
Bake, turning once, for 10 minutes or until crisp; sprinkle one side with pepper.
Place goat cheese rounds on toasts for serving.
