The big surprise with kosher recipes is their familiarity. They comprise all the many kinds of foods we love to eat, including traditional American dishes, regional favorites and all the popular international and ethnic foods. Its distinctively international flare simply reflects all the countries and cultures where Jews have lived. Kosher recipes do not use pork or shellfish, or mix milk and meat products, a Jewish dietary prohibition. Nonkosher cooks can simply substitute with their favorite ingredients. Many of the recipes offer contemporary versions that reflect dietary trends with nondairy, vegetarian and trimmed down ingredients.
