CORN COUNTRY SQUARES
Serves about 4.
1 cup cornmeal 1 cup flour 3/4 teaspoon salt 4 teaspoons baking powder 1/4 cup sugar 2 eggs 1 cup milk 1/4 cup vegetable oil
Cooking Directions In a large bowl mix together well all dry ingredients; in a medium bowl beat together eggs, milk and oil. Mix wet ingredients into dry, stirring to blend quickly (do not overmix). Pour batter into a greased 8x8-inch baking pan. Bake in a 400 degrees F. oven for 20-25 minutes, until very lightly browned on top. Remove from oven, let cool slightly and cut into squares to serve. Makes nine squares.
