BLUEBERRY STREUSEL CORNBREAD

 

Fix-it And Enjoy-it Cookbook

Prep Time: 20-30 minutes
Baking Time: 45-50 minutes
Makes 9 servings


Ingredients
• 2 pkgs. corn-muffin mix
• 2 eggs
• 2/3 cup milk
• 2 Tbsp. flour
• 2 cups fresh blueberries

Streusel Topping:
• 3 Tbsp. butter or margarine, softened
• 3/4 cup sugar
• 1/2 cup flour
• 3/4 tsp. cinnamon


Directions
1.
Mix corn-muffin mix, eggs, milk, and flour in a medium-sized mixing bowl for 30-60 seconds, using an electric mixer.

2. Fold in blueberries. Pour into greased 9x9 baking dish.

3. In a small mixing bowl, using a pastry blender, combine Streusel ingredients until mixed into fine crumbs. Spoon over cornbread mixture in pan.

4. Bake at 350° for 45-50 minutes, or until a toothpick stuck into the center comes out clean. Serve warm.
