Eggland's Best (EB) offers better taste, better nutrition and better eggs and with the re-launch of their new Web site, consumers can easily find many ways to enjoy EB eggs. Online visitors now have the opportunity to learn more about the number one branded eggs by checking out the new and improved Web site where they have access to quick ideas (like "Breakfast for Dinner" and Holiday Meals), promotions, coupons, an easy-to-use store locater, can learn more about the all-vegetarian feed used to nourish EB hens and how these eggs can bring out the best taste and flavor in their favorite recipes, as well as boost their nutritional content.

As you may know, eggs are an excellent source of protein.  Specifically, EB eggs contain less saturated fat and lower cholesterol than ordinary eggs.  EB eggs are also a great source of Omega-3 Fatty Acids, lutein, Vitamin E and Iodine. 43rd Pillsbury Bake-Off
Eggland's Best was voted the Best Tasting Egg in America by the professional Chefs of the American Culinary Chefs Best for the last five consecutive years in a row and was the Official Egg of the 43rd Pillsbury Bake off.
Amateur cooks entered their best recipe for a chance to become a finalist in the Pillsbury Bake-Off and winner of a million dollar prize.

Remember when you are planning recipes from Breakfast to Brunch, for Dinner or Fancy Cocktail Party fare or celebratory sweet treats, if your recipe calls for eggs make sure to use Eggland's Best eggs to enhance both the taste and nutritional content of your culinary creation.
 

SELECTED RECIPES

Eggland's Best French Toast Strata

Serving Size:  8 - 10
Preparation Time:  15 minutes
Cook Time:  35 minutes
Serving Ideas:   Breakfast & Brunch


Ingredients
• 8-10 slices day old bread, torn into pieces
• 1 package (8oz) lite cream cheese, softened
• 1 cup milk
• 10 large Eggland's Best eggs
• 1 teaspoon cinnamon
• 1 teaspoon grated nutmeg
• 1 teaspoon orange extract or 1 Tbsp orange liquor
• 1 cup brown sugar (optional)

Preparation Method
Evenly layer bread cubes over the bottom of greased 9x13 baking dish. Blend milk, cream cheese, Eggland's Best eggs, spices, and orange extract in a blender until well mixed. Pour evenly over bread. Cover. Refrigerate over night. Uncover and bake in a preheated 350° F oven for approximately 35 minutes until golden brown and knife inserted near center comes out clean. Sprinkle with brown sugar (optional). Serve with warmed maple syrup.
 

Eggland's Best Veggie Quiche Crustless

Serving Size:  10
Preparation Time:  10 minutes
Cook Time:  20 minutes
Serving Ideas:   Main Dishes


Ingredients
• 6 Eggland's Best eggs
• 1 10 oz package frozen spinach, chopped and defrosted
• 3/4 cup shredded low fat cheddar cheese
• 1/4 cup diced green bell pepper
• 1/4 cup diced onion
• 1/4 teaspoon salt
• 1/8 teaspoon nutmeg (optional)
• 1/4 teaspoon pepper
• 1 teaspoon Dijon mustard

Preparation Method
Microwave the spinach for 2 minutes on high. Drain excess water. Spray muffin tin cups with cooking spray. Combine Eggland's Best eggs, cheese, pepper, onions, spinach, and seasonings in a bowl. Mix well. Divide evenly among muffin cups (1/4 cup each).

Bake at 350° F for 20 minutes, until a knife inserted in the center comes out clean.

Note: Quiche cups can be frozen and reheated in the microwave. Any combination of appropriate vegetables and reduced fat cheeses may be used.
 

Eggland's Best Mimosa Eggs

Serving Size:  22
Preparation Time:  20 minutes
Serving Ideas:   Appetizers & Snacks


Ingredients
• 12 Eggland's Best eggs - hard cooked
• 2 ripe avocados - halved
• 1 garlic clove - crushed
• few drops hot sauce
• 1 tablespoon olive oil - extra virgin
• 1/4 teaspoon salt
• 1/8 teaspoon pepper
• basil leaves - garnish

Preparation Method
1.
Reserve 2 of the hard cooked eggs for garnish.
2. Carefully remove the yolks with a teaspoon and blend together with garlic, avocados, hot sauce, and olive oil.
3. Pipe or spoon the mixture into the egg white halves.
4. Sieve the remaining egg whites and sprinkle over the filled eggs. Sieve the yolks on top. Sprinkle a little ground pepper over the eggs and scatter with basil leaves.
