BANANA HEAVEN

This is the Blue Heaven Restaurant version of Bananas Foster, created at the renowned Brennan's Restaurant in New Orleans during the 1950s.  Supposedly created for a regular customer named Richard Foster, the original consisted of sliced bananas sautéed with butter, brown sugar, cinnamon, dark rum and banana liqueur, flamed and served with vanilla ice cream.

The Blue Heaven version uses spiced rum, eliminates the banana liqueur, and instead is served over a slice of Betty's banana bread and home-made vanilla bean ice cream.  It really is "Banana heaven!" (Darn the calories, full speed ahead!).
 

BANANA HEAVEN RECIPE

Place 1 TB butter, 1/4 cup brown sugar and 2 pinches cinnamon in a sauté pan and heat on high -
when butter is partially melted add 1 whole banana - split lengthwise then cross wise (4 pieces) and 1 1/2 TB orange juice - heat until butter and sugar are melted and sauce is bubbling -

CAREFULLY add 1/2 to 3/4 ounce of Spiced Rum (we use Capt Morgans) - carefully tilt pan so rum ignites -

Pour over a slice of banana bread and top with a large scoop of vanilla ice cream.
