Pignoli in Italian, Pignon in French. They are the small, edible seeds from the pine cones of various species of pine trees.

Pine nuts have a high oil content, so they have a tendency to go rancid.  They should be stored in airtight containers (ziplock bags are good) and will keep refrigerated for up to 3 months or frozen for about 9 months.

There are about 165 pine nuts to the ounce.
