SAUCY LENTIL SALAD

Preparation time:  2 hour(s) 40 minute(s)
Number of servings: 6
Number of 5 A Day servings: 1

 
Ingredients
• 1/2 cup, lentils, uncooked 
• 1-1/2 cup, water 
• 1 cup, brown rice, uncooked 
• 1/2 cup, fat-free Italian salad dressing 
• 1 tomato, diced 
• 1 cup, chopped green bell pepper 
• 1 cup, chopped red bell pepper 
• 1/2 cup, chopped onion 
• 1/2 cup, chopped celery 

 
Directions
Rinse lentils and cook in water for 20 minutes or until tender; drain.

Check lentils for tenderness after 15 minutes of simmering; they should be tender and firm, but not soft

While lentils are simmering, cook brown rice according to package directions.

Combine remaining ingredients.

Mix with lentils and rice; toss, and chill for 2 hours.
