CRAB, ALMOND CRAB SALAD
Yield: Makes 4 servings.
Ingredients • 2 cups cooked rice, cooled • 2 cups (8 ounces) crab meat* • 1 cup frozen peas, thawed • 1 cup sliced celery • 1/4 cup sliced green onions • 1/3 cup mayonnaise • 1/3 cup sour cream • 3 tablespoons fresh lemon juice • 1/4 teaspoon ground white pepper • Lettuce leaves • 1/2 cup sliced almonds, toasted *Surimi Seafood, crab flavored, flake or chunk style may be substituted.
Directions Combine rice, crab meat, peas and green onions in large mixing bowl. Blend mayonnaise, sour cream, lemon juice and white pepper.
Add to rice mixture; toss lightly.
Serve on lettuce leaves.
Garnish with almonds.
