AMARETTO CHEESECAKE (Graham Cracker)
Servings: 16 Yield: "1 Cake"
6 Cups Graham Cracker Crumbs 3/4 Cup Butter -- softened 1 Tablespoon Granulated Sugar 1/4 Teaspoon Nutmeg 3 Pounds Cream Cheese 1 Cup Granulated Sugar 1/3 Cup Amaretto Liqueur 1 Teaspoon Lemon zest -- grated 1/2 Teaspoon Lemon juice 2 Teaspoons Vanilla Extract 1/4 Teaspoon Salt 6 Whole Eggs
Optional Topping 1 1/2 Cups Sour Cream 2 1/2 Tablespoons Granulated Sugar 1/4 Teaspoon Vanilla Extract
[1) Mix crust ingredients thoroughly. Line bottom and part way up side of 10" spring form pan.
[2) Beat Cream Cheese until soft.
[3) Add remaining ingredients, EXCEPT EGGS, and continue mixing on LOW, scraping sides of bowl to avoid lumps.
[4) Add Eggs, one at a time, constantly scrapeing sides. Mix Well.
[5) Pour into spring form pan, and bake at 300° F for 15 minutes, then at 225 degrees for 2 hours. (put a pan of water in oven)
OPTIONAL TOPPING BLEND TOGETHER VERY WELL.......... When Cheesecake is done, smooth on top of cake and bake for an additional 8-10 minutes.
