BEEF BARLEY LENTIL SOUP

Beef Barley and Lentil Soup

Makes: 10 Servings
Prep Time: 20 Minutes
Cooking Time: 8 Hours
Ideal Slow Cooker Size: 5-6-Quart


Ingredients

· 1 lb. extra-lean ground beef
· 1 medium onion, chopped
· 2 cups cubed potatoes
· 1 cup chopped celery
· 1 cup diced carrots
· 1 cup dry lentils, rinsed
· ½ cup medium-sized pearl barley
· 8 cups water
· 2 tsp. beef bouillon granules
· ½ tsp. salt
· ½ tsp. lemon pepper seasoning
· 2  14½ oz. cans low-sodium stewed tomatoes, undrained


Directions

1.
Brown ground beef with onions in a skillet. Drain.

2. Combine all ingredients except tomatoes in slow cooker.

3. Cook on Low 6 hours, or until tender.

4. Add tomatoes. Cook on Low 2 more hours.

Variations:
For added zest, you may want to increase the lemon pepper seasoning to 1 tsp.
You may also want to add ½ tsp. dried basil and ½ tsp. dried thyme to Step 2.

Per Serving: 250 calories (40 calories from fat), 4.5g total fat (1.5g saturated, 0g trans), 15mg cholesterol, 680mg sodium, 35g total carbohydrate (9g fiber, 7g sugar), 17g protein, 60% DV vitamin A, 40% DV vitamin C, 6% DV calcium, 25% DV iron.
