STRAWBERRY MUFFINS 2

From Donna Huff, Albany, NY


1 3/4 cups all purpose flour
1 tbs. baking powder
1/2 teaspoon salt
1/4 cup sugar
1 egg
1 1/4 cups milk
1/4 cup shortening, melted
3/4 cup fresh strawberries, whole or sliced


Sift together flour, baking powder, salt and sugar.

Beat egg, milk and shortening together.

Add the liquid to dry ingredients and mix until just barely combined.

Stir in strawberries.

Spoon mixture into 12 medium sized, greased muffin cups.

Bake at 400 degrees F, 20-25 minutes or until golden brown.

Serve hot from the oven.
