TRIPLE THREAT CHOCOLATE ZUCCHINI MUFFINS

 

I found these flowerpots in a gourmet shop years ago, but any unglazed standard pot can be used. Just be sure to cover the hole in the bottom with a piece of aluminum foil. Even my husband, who avoids vegetables and claims he doesn't like anything green, wolfs down these muffins.
Makes 18 flowerpots or standard muffins


Ingredients

    • 3 cups flour
    • 1/3 cup cocoa powder
    • 1 tablespoon baking powder
    • 1/2 teaspoon baking soda
    • 1½ teaspoons salt
    • 2 teaspoons cinnamon
    • 1 teaspoon freshly grated nutmeg
    • 1/2 teaspoon ground cloves

    • 1/2 cup milk
    • 2 eggs, lightly beaten
    • 3/4 cup vegetable oil
    • 1 cup sugar

    • 2 cups shredded zucchini
    • 1 cup chocolate chips
    • 1 cup chocolate nibs or substitute chopped nuts (walnuts, pecans, macadamias...)


Directions

Preheat oven to 400°.

Mix dry ingredients together.

Mix the milk, eggs, oil and sugar together and add to the dry ingredients.

Add zucchini, chips and nibs and mix just until blended.

Spoon the batter into greased pots or muffin tins and bake at 400° for 12-15 minutes until the top bounces back when tapped lightly with your finger.
