MANGO CHUTNEY
2 Cups Red Onion -- diced 1/2 Cup Cider Vinegar 3/4 Pound Light Brown Sugar
2 Cups Apple -- diced 2 Cups Pear -- diced 1 Teaspoon Curry Powder
1 Cup Mango -- diced
INSTRUCTIONS Place red onion, vinegar and brown sugar in a stainless pot and bring to a simmer.
Cook for about 30 minutes.
Add diced apples, pears and curry powder and cook for a further 20 minutes (or until syrupy).
Remove from heat and add Mango.
NOTES: Be sure that all fruit is ripe.
