DRIED FRUIT AND NUT GRANOLA BARS

 

Recipe from ‘Nuts’ by Avner Laskin
Take these bars with you on your next hike or camping trip, and you'll wish you'd made more.
Serves 4


INGREDIENTS

• 1/2 cup honey
• 1 teaspoon cinnamon
• 2 cups oats
• 1/2 cup whole almonds
• 1/2 cup whole walnuts
• 1/4 cup dried cranberries
• 1/4 cup raisins
• 1 teaspoon vanilla extract


PREPARATION
1.
Heat a medium saucepan over medium heat. Add the honey and cinnamon, and cook until the honey begins to bubble. Add the oats, almonds, and walnuts, and mix well.

2. Cook for 3 minutes.

3. Remove from the heat, and add the cranberries, raisins, and vanilla, and mix well.

4. Pour the mixture into a deep baking dish lined with baking paper.

5. Cover the mixture with baking paper and press a heavy object (like a wine bottle) on top to tightly pack the mixture in the pan.

6. Transfer to the freezer for at least 2 hours. It's best to prepare this snack a day before serving, leaving it in the freezer for the whole day.

7. Remove the granola from the freezer, and use a sharp knife to cut 1-inch by 3-inch bars.

8. Serve immediately, or store in an airtight container away from any moisture for up to 1 week.
