HELLZAPOPPIN' WINGS

Serves 4

 

INGREDIENTS

    For the Blue Cheese Dressing

      • 1/2 cup sour cream
      • 4 ounces crumbled blue cheese
      • 1/2 cup mayonnaise
      • 3 tablespoons white wine vinegar
      • Salt and pepper
      • 2 tablespoons chopped chives
       

    For the Wings

      • 3 dozen chicken wings, separated at the joint
      • 1 cup sweet pepper jelly
      • 2 tablespoons hot pepper sauce, or to taste
      • 1 teaspoon dry mustard
      • 1 teaspoon paprika
      • Salt and pepper
       

Ingredients

1. For the Dressing, combine the sour cream, blue cheese, mayonnaise, and vinegar in a blender. Process until smooth and season with salt and pepper to taste. Transfer to a serving bowl and stir in the chives. Cover with plastic wrap and refrigerate until serving.

2. For the Wings, preheat and oil the grill. Place the wings in a shallow baking dish. Combine the jelly, hot pepper sauce, mustard, and paprika in a small saucepan over medium heat. Cook, stirring, about 3 minutes or until the jelly has melted and the mustard and paprika are blended. Season with salt and pepper to taste. Remove from the heat and pour over the wings, tossing to coat well.

3. Grill the wings, turning frequently, about 25 minutes or until cooked through and nicely charred. Remove from the grill. Serve hot with the dressing on the side.
