DATE MUFFINS

Makes 6 Servings

2 cups all-purpose flour
3/4 teaspoon salt
2 tablespoons sugar
4 teaspoons baking powder
1 egg
1 cup low-fat milk
2 tablespoons butter or margarine, melted
1/2 cup dates, chopped


1. Preheat oven to 400°F.

2. Combine flour, salt, sugar, and baking powder.

3. Combine egg, milk, and butter; mix well and add dates.

4. Combine liquid ingredients with dry ingredients, stirring only until flour mixture is moistened.

5. Fill greased muffin pans, and bake for 20-25 minutes or until muffins test done.
