TOMATO, DRIED PLUM & FETA SALAD

Ingredients • 2 pints cherry tomatoes, each cut in half • 1/2 cup crumbled feta cheese • 1/2 cup thinly sliced red onion • 1/2 cup (about 3 ounces) finely chopped dried plums • 1/3 cup olive oil • 1/4 cup red wine vinegar • 1/2 teaspoon crushed garlic • Torn salad greens (optional)
Preparation In medium bowl, combine tomatoes, feta cheese, onion and dried plums; set aside.
In small bowl, whisk together oil, vinegar and garlic.
Add to tomato mixture; toss lightly to coat.
Serve with salad greens, if desired.
