SAVORY SUPPER MEATBALLS

Serves 4.

Ingredients

    · 1 pound ground pork
    · 1/4 cup chopped onion
    · 1 egg
    · 1/2 cup instant oatmeal
    · 1/4 teaspoon salt
    · 1/8 teaspoon ground black pepper
    · 2 teaspoons mustard
    · 1/2 cup milk
    · 3-4 tablespoons ketchup 
     

Cooking Directions

Heat oven to 350 degrees F.

Put pork in a large bowl, add all other ingredients except ketchup.

With clean hands, mix together all ingredients thoroughly—this will take a few minutes to make sure everything is well blended.

Spoon equal portions into 8 muffin cups.

Top each muffin with a teaspoon or so of ketchup.

Bake for 25 minutes.

Serve warm with more catsup, if desired.
 

Serving Suggestions
These meatballs are fun and easy made in a muffin tin. Kids can make these as part of a family dinner. Makes a great snack, a lunch, or a family dinner when served with a green vegetable, hot rice, a fruit salad and dinner rolls.
