ROASTED DUCK BREASTS WITH CRANBERRY GLAZE

INGREDIENTS
CRANBERRY COULIS W/ORANGES • 1½ lb Cranberries • 1¼ cup Sugar • 1 cup Orange juice
• 1 Oranges; zest from 1 orange • 1/2 cup Water
• 1/3 cup Tripple sec
DUCK • 6 Duck breasts • Salt & pepper • Oranges; slices
DIRECTIONS
[1) Make Cranberry Coulis. [2) Place Duck breasts on roasting rack and season with salt & pepper. Roast 15 minutes at 450 degrees. [3) Spoon some Cranberry coulis over duck breasts and put in oven for 4-5 minutes longer. [4) Cut breasts diagonally into slices. Fan slices on plate.
• Spoon more of Cranberry Coulis on top. • Garnish with Orange slices or sections.
