Yield: 6 servings CRANBERRY COULIS W/ORANGES1 1/2 lb Cranberries1 1/4 c Sugar1 c Orange juice1 Oranges; zest from 1 orange1/2 c Water1/3 c Tripple secDUCK6 Duck breastsSalt & pepperOranges; slices [1) Make Cranberry Coulis. [2) Place Duck breasts on roasting rack and season with salt & pepper. Roast 15 minutes at 450 degrees. [3) Spoon some Cranberry coulis over duck breasts and put in oven for 4-5 minutes longer. [4) Cut breasts diagonally into slices. Fan slices on plate. Spoon more of Cranberry Coulis on top. Garnish with Orange slices or sections.
