ROASTED DUCK BREASTS WITH CRANBERRY GLAZE
Yield: 6 servings CRANBERRY COULIS W/ORANGES 1 1/2 lb Cranberries 1 1/4 c Sugar 1 c Orange juice
1 Oranges; zest from 1 orange 1/2 c Water
1/3 c Tripple sec
DUCK 6 Duck breasts Salt & pepper Oranges; slices
[1) Make Cranberry Coulis. [2) Place Duck breasts on roasting rack and season with salt & pepper. Roast 15 minutes at 450 degrees. [3) Spoon some Cranberry coulis over duck breasts and put in oven for 4-5 minutes longer. [4) Cut breasts diagonally into slices. Fan slices on plate.
Spoon more of Cranberry Coulis on top. Garnish with Orange slices or sections.
