PRETZELS, BUTTERY SOFT PRETZELS

Fix-it And Enjoy-it Cookbook

Makes 12 pretzels
Preparation Time: 20 minutes
Standing and Rising Time: 70 minutes
Baking Time: 8 minutes


Ingredients
• 4 tsp. dry yeast
• 1 tsp., plus 1/2 cup sugar, divided
• 1 1/4 cups warm (110°) water
• 5 cups flour
• 1 1/2 tsp. salt
• 1 Tbsp. vegetable oil
• 1/2 cup baking soda
• 4 cups hot water
• salt


Directions
1.
Dissolve yeast and 1 tsp. sugar in warm water. Let stand 10 minutes.

2. In large mixing bowl, mix flour, 1/2 cup sugar, and salt. Make a well in the center.

3. Add yeast mixture and oil to dry ingredients. Mix well. If dry, add several tablespoons water.

4. Knead dough 7-8 minutes, until elastic. Place in oiled bowl and cover. Let rise in a warm, draft-free place until double, about 1 hour.

5. Preheat oven to 450°.

6. Dissolve baking soda in hot water in large bowl.

7. Divide dough into 12 pieces. Roll each into a long, thin rope—about 20" long—on an unfloured surface. Shape each into a pretzel.

8. Dip in soda-water solution and place on greased baking sheet. Sprinkle with salt.

9. Bake 8 minutes until browned. Brush with butter.
