FESTIVE CORN MUFFINS
Serves 6
1/2 cup cornmeal 1/2 cup flour 1/4 teaspoon salt 2 teaspoons baking powder 2 tablespoons sugar 1 egg 1/2 cup milk 2 tablespoons vegetable oil 2 tablespoons diced red bell pepper 2 tablespoons diced green bell pepper
Cooking Directions In large bowl, stir together first five ingredients.
In medium bowl, beat together remaining ingredients; add to dry ingredients and blend quickly.
Turn into greased muffin tin and bake in a 400 degrees F. oven until lightly golden, about 15-20 minutes.
Serving Suggestions These pretty corn muffins complete a meal with a colorful touch. Fix with a meal of Winter White Chili or Southern Skillet BBQ Pork.
