David Pace's Original Picante sauce recipe is locked in a vault at the Paris, Texas plant and is accessible by only the Manager of Quality.

Eighty-nine different varieties of Pace Picante sauces and salsas are made in Paris, Texas.

On the 50th anniversary of Pace Foods in 1997, May was declared National Salsa Month in recognition of the popularity and unique heritage of salsa.

Pace Foods Paris, Texas plant produces up to 450 bottles of Pace product per minute.

Pace Foods uses more fresh jalapenos than anyone else in the country - 22 million pounds a year.

Pace uses 35 million pounds of fresh tomatoes and 21 million pounds of fresh onions per year.

The Pace brand is known for its unique hourglass bottle - designed by David Pace to be "tip-proof" and to fit comfortably in the hand - and the subject of a federal trademark registration.
