ROASTED CLAMS WITH VINEGAR SAUCE
2-3 pounds Florida Hard Clams
Place washed clams in a single layer on a roasting pan or a baking sheet with sides. Roast in a 350 degree oven for about 10-12 minutes, depending on size of clams. When clams open, remove them from oven and serve with cocktail sauce, drawn butter or the following vinegar dipping sauce.
Vinegar Dipping Sauce 1/2 cup cider vinegar 1 teaspoon salt 1 teaspoon minced Florida garlic 1 teaspoon fresh cracked black pepper 1/2 cup Florida green onions, finely chopped 1/4 cup Florida tomatoes, finely chopped
