ROASTED POTATOES WITH FETA

Fragrant and crispy little potato pieces topped with feta and olive oil. Holy crap! Mrs. Cooking Guy - we'll call her Kelly - asks for these often. Of course I oblige only about one out of every four or five times. Hey, I can't have her thinking I'm her personal chef, can I?
Serves 6 to 8



Ingredients

• 2 pounds small red potatoes, quartered
• 1 large red onion, peeled and cut into a big dice like the potatoes
• 4 cloves garlic, crushed
• 2 tablespoons chopped fresh rosemary
• 2 tablespoons extra virgin olive oil, plus extra for serving
• 6 ounces feta cheese, crumbled


Directions

Preheat the oven to 450°F Put the potatoes, onion, garlic, rosemary, and oil in a large bowl and mix well.

Dump everything onto a baking sheet, spread out, and put in the oven.

Bake until brown and crispy about 45 minutes, but don't burn them.

Remove from the oven, place on a serving tray or plates, and top with the feta and a good drizzle of olive oil.
