1 tablespoon butter
1 tablespoon olive oil
4 large red-skinned potatoes, cut into wedges
1 garlic clove, crushed
In shallow baking pan, heat butter and olive oil in 400 degree F. oven.
Remove pan from oven,and stir in potato wedges and garlic, toassing to coat potatoes evenly with butter mixture.
Return pan to oven, continue baking, stirring occasionally, 25-40 minutes, until potatoes are golden and tender.
Season to taste with salt and pepper.
