Ingredients • 4 garlic cloves, minced • 1 cup shredded Cheddar cheese, divided • 1 cup shredded mozzarella cheese, divided • 1/4 cup grated Parmesan cheese • Salt and pepper to taste • 2 large baking potatoes, peeled and thinly sliced • 1/4 cup olive oil • 2 large sweet potatoes, peeled and thinly sliced • 2 large red-skin potatoes, peeled and thinly sliced
Directions 1. Preheat oven to 350°F. Grease 9-inch square pan.
2. Combine garlic, cheeses, salt and pepper.
3. Cover bottom of pan with baking potatoes, overlapping slightly.
4. Drizzle with one-third oil and sprinkle with one-third cheese mixture.
bTop with sweet potatoes and one-third oil and cheeses. Repeat with red-skin potatoes and cheeses. Cover and bake 1 hour or until potatoes are tender.
