PORK ROAST WITH SWEET POTATOES
Makes 6 Servings
• 2 1/4 pounds (4 1/2 cups, drained) cooked pork, diced • 1 (15.5-ounce) can sweet potatoes • 1 green bell pepper • 1/2 cup apple cider • 3 tablespoons brown sugar • 1 teaspoon cinnamon • Salt and pepper to taste
1. Preheat oven to 350°F.
2. Put pork, chopped sweet potatoes, and chopped green peppers in large baking dish.
3. Mix the remaining ingredients and pour over all; cook for 30-40 minutes.
