PEAS - TINY PEAS WITH MINT

Serves 8.

2 tablespoons butter
1 cup diced onion
1 1/2 teaspoons grated lemon zest
2 10-oz. boxes frozen tiny peas
Salt and pepper, to taste
1 tablespoon chopped fresh mint 


Cooking Directions
In a medium saucepan, melt butter over low heat.

Add the onion and lemon zest and cook gently, stirring occasionally, until onion is soft but not browned, about 4 minutes.

Add the peas to the pan and stir to combine thoroughly.

Season with salt and pepper and cook, stirring, for about 5 minutes or until the peas are heated through.

Stir in mint and serve immediately.

Serving Suggestions
Spring has certainly sprung.
Serve as part of your spring ham buffet or with pork chops.
