PASSIONATE PLANTAINS

Yield: 6 - 8 servings 
 
3 - 4 Florida plantains, peeled and sliced
1 tablespoon butter, melted
1/4 cup Florida honey
Juice and zest of one Florida lime
Juice of 3 Florida passion fruit (1/3 cup Florida orange juice may be substituted)
1/2 teaspoon nutmeg

 
Step One
Arrange plantains in a glass pie pan or baking dish.

Sprinkle top with remaining ingredients.

Step Two
Bake at 350 degrees for 30 minutes.

A wonderful accompaniment to chicken, pork or brunch dishes.
