HEALTHY BLUEBERRY PEACH COBBLER

The Rice Diet Solution by Kitty Gurkin Rosati, Robert Rosati

This cobbler just melts in your mouth.
Yield: 6 servings


Ingredients
• 1 teaspoon extra virgin olive oil
• 1 cup fresh blueberries
• 2 cups fresh peaches, peeled and cut into bite-size pieces
• 6 teaspoons flaxseed, ground
• 1 cup oatmeal, raw
• 1 tablespoon vanilla extract
• 2 teaspoons cinnamon


Directions
Preheat oven to 450 degrees F.

Coat a small 2-inch-deep baking pan with olive oil.
Place blueberries and peaches in pan.

In a coffee grinder or blender, finely grind the flaxseed and then mix with remaining ingredients.

Add mixture to fruit and stir well to combine.

Bake about 25 minutes. Serve cool or warm.

Allowances: 1/6 fat + 3/4 starch + 3/4 fruit
