Yield: 4 Portions

• 2.00 tbsp. Peanut oil
• 1.00 lb. Fresh Broccoli, cut
• 12.00 oz. Fresh Shiitake mushrooms
• 2.00 medium Green onions, chopped
• 0.25 cup Dry Roasted Cashews
• 1.00 tbsp. Water
• 0.25 tsp. Salt
• 0.25 tsp. Ground Nutmeg

Place frying pan over high heat, add oil.

When oil is hot, add broccoli and salt.

Stir fry for 1 minute.

Add water and cook, stirring until broccoli is tender, yet crisp.

Remove broccoli and set aside.

Add mushrooms, onions and nutmeg.

Stir fry until juices evaporate (about 3 minutes).

Return broccoli to frying pan and stir to mix.

Top with cashews.

Serve with steamed rice.
