MUSHROOMS, CHINESE STYLE STIR FRIED

Yield: 2 Portions

INGREDIENTS
• 2.00 tbs. Peanut Oil
• 1.00 tsp. Ginger, minced
• 1.00 tsp. Garlic, minced
• 8.00 oz. Fresh Shiitake Mushrooms, quartered (about 2 1/2 cups)
• 1.00 tbs. Soy Sauce
• 1.00 tbs. Green Onion, green part only, sliced (scallions)
• 1.00 tbs. Sesame Oil

DIRECTIONS
Over medium-high heat, heat a large heavy nonstick skillet until a drop of water sizzles on the surface.

Add oil, ginger, and garlic; cook, stirring constantly, until fragrant, about 1 minute.

Add mushrooms; cook, stirring frequently, until mushrooms are golden brown, 3 to 4 minutes.

Add soy sauce and sesame oil; cook and stir until most of the soy sauce evaporates, 1 to 2 minutes.

Remove from heat; sprinkle with green onion.

Top with toasted sesame seeds and serve over steamed rice, if desired.
