MARINARA SAUCE

Yield: 3 1/2 Quarts

1/4 Cup Olive Oil
1 Whole Yellow Onion -- chopped fine

2 Tablespoons Fresh Parsley -- finely chopped
2 Tablespoons Fresh Basil -- finely chopped
2 Tablespoons Garlic Cloves -- minced
1 Teaspoon Oregano
1/2 Teaspoon Thyme

1 Gallon Plum Tomatoes, Diced *
Salt and Pepper -- to taste


Heat Olive oil in sauce pan on medium heat Add Onions and sauté 15 minutes

Add herbs and garlic, continue to sauté for 2 to 3 minutes.

Add Tomatoes and *saved juice, Salt & Pepper and simmer for about 30 minutes. Stir occasionally.

Notes: * Drain the tomatoes and chop finely, save about 1/3 of juice.
