GREEK STYLE GARBANZO SALAD

5 to 9 A DAY FRUITS & VEGETABLES

This is an official 5 A Day recipe.
Makes 4–6 servings.

Ingredients
• 1-1/2 cups cooked (1/2 cup dry) or 1 can (15 oz.) garbanzo beans, drained
• 1/2 cup red onion, thinly sliced
• 1/2 cup tomato, diced
• 1/2 cup green bell pepper, chopped
• 3 Tbsp. (or to taste) rice vinegar or apple cider vinegar
• 2 Tbsp. lemon juice
• 2 tsp. olive oil
• 1–3 Tbsp. garlic, minced
• 2 Tbsp. fresh parsley, chopped
• Salt and pepper to taste


Directions
Combine all ingredients in a large bowl.

Let marinate at room temperature several hours then refrigerate.
 

Nutritional Analysis Per Serving: Calories, 145; Fat, 4 g; Cholesterol, 0mg; Fiber, 4g; Sodium, 11 mg; percent calories from fat, 25%.
