YAMS AND CARAMELIZED APPLES

Serves 8


Ingredients

• 1 pound yams or sweet potatoes, sliced into 1/2-inch-thick rounds
• 1 pound apples, such as Rome Beauty, Golden Delicious, or Northern Spy
• 1/2 cup (1 stick) unsalted butter
• 1 large Spanish onion, sliced into 1/2-inch-thick rounds
• 1/2 teaspoon ground cinnamon
• Salt and freshly ground black pepper


Directions

Bring a pot of water to a boil over high heat. Parboil the yams until they are no longer crisp, but will not break apart, about 5 minutes. Peel and core the apples, and cut them into 1/2-inch-wide wedges.

Melt the butter in a large skillet. Add the onion and cook over medium-low heat until very soft and juicy, about 10 minutes. Add the apples and yams; dust with cinnamon.

Increase the heat to high and saute until the ingredients are attractively browned. Season to taste with salt and pepper.
