Makes 8 servings


• 4 sweet potatoes
• Salt and ground black pepper to taste.
• 4 tablespoons Cabot Salted Butter, cut into 1/2 inch pieces
• 1/3 cup honey
• 1/3 cup orange juice
• 3/4 cup Cabot Chipotle Cheddar Cheese


1. Preheat oven to 400 F.

2. Bring large pot of water to boil.

3. Peel sweet potatoes and cut into 1 1/2 inch-thick rounds.
Add to boiling water and cook until barely tender, about 5 minutes.

4. Drain well and arrange in shallow baking dish.
Season with salt and pepper and dot with butter.

5. Drizzle with honey and orange juice.

6. Bake for 15 minutes.
Remove from oven and turn potatoes over.
Return to oven for 25 minutes longer, or until tender, crisp and lightly browned.

7. Sprinkle with cheese and serve.
