SWEET POTATO AND BLACK PEPPER BISCUITS

 

Entertaining with Bluegrass Winners Cookbook
(Hurricane Hall)
Makes Approximately 24 Biscuits


Ingredients

• 2 cups unsifted all-purpose flour
• 1/4 teaspoon salt
• 2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1 teaspoon sugar
• 1/2 teaspoon cracked black pepper
• 3/4 cup (1 1/2 sticks) unsalted butter
• 1 cup cooked sweet potatoes, pureed
• 2 tablespoons heavy cream


Directions
• Preheat oven to 425°F.

• In large bowl, combine all dry ingredients.

• Using pastry blender, food processor, or your fingertips, cut butter into flour mixture until mixture resembles coarse crumbles.

• Stir in sweet potato puree and cream and mix gently until soft dough forms.You may need to add extra cream. Do not overmix.

• Turn out dough onto lightly floured surface. Knead gently 5 times. " Pat out dough to 1/2-inch thickness.

• Using a 2-inch biscuit cutter, cut dough and place on ungreased baking sheet.

• Bake at 425°F until lightly browned, approximately 12 to 15 minutes.
