STRAWBERRY FRITTERS

Serves four.

• 2/3 cup flour
• 1 pinch salt
• 1 egg, slightly beaten
• 8 teaspoons beer
• 4 egg whites, beaten stiff
• 28 large Florida strawberries
• 2 quarts oil (for deep fryer)
• 6 1/2 tablespoons Grand Marnier
• 1/4 cup granulated sugar


Make a batter by combining the flour with the salt, egg, and beer.

Let the batter rest for at least two hours, then carefully fold in the egg whites.

Heat the oil in a deep fryer until it reaches 300 degrees F.

Wash and dry the strawberries and marinate in the Grand Marnier and sugar for 15 minutes.

Dip each in the batter and deep fry until golden brown.
