CAULIFLOWER PATTIES

 

Upper Crusts: Fabulous Ways To Use Bread
My friend Vivi gave me the recipe for these creamy patties. They have a nice outer crust and a light interior. When made with matzah meal, this is a typical Sephardic recipe served for Passover called ‘Fritada di Cauliflor’.
Serves 4 to 6.


Ingredients

• 1 large cauliflower, broken up
• 3 large eggs, beaten
• 1 cup dry bread crumbs or matzah meal
• salt*
• freshly ground pepper
• canola oil for frying
*Note: You might want to use more salt and pepper than you normally would in a recipe.


Directions
In a large pot, cook the cauliflower until soft in salted boiling water, about 15 minutes.

Drain well and mash in a food processor.

Add the eggs, bread crumbs, salt, and pepper; mix well.

In a large frying pan, heat enough oil to cover the bottom to a depth of at least an inch. Wet your hands and shape the mixture into ovals, and drop into hot oil.

Cook, turning, until both sides are browned. Drain well and serve hot.
