CABBAGE 'CASSEROLE' RECIPE

rice cooker meals

Rice Cooker Meals
by Neal Bertrand
Cabbage in a rice cooker is a very popular dish and goes by various names, such as Almost Cabbage Rolls. It's all good. We got lots of compliments on it.
Contributed by Belinda Savoie - Crowley, La

Recommended for an 8-cup rice cooker.
Serves 4 to 8 people, depending on if this dish is being used as a main dish or a side dish.

Ingredients

• 1 lb. ground meat
• 1 lb. smoked sausage, sliced
• 1 medium onion, chopped
• 1 medium bell pepper, chopped
• 4-5 green onions, chopped
• Chopped parsley, optional
• Salt and pepper, to taste
• Garlic powder, to taste
• Tabasco Brand Pepper Sauce to taste, or serve at the table
• 1 (10-oz.) can of diced tomatoes with green chilies, undrained
• 1 cup water
• 1 cup (8 oz.) uncooked medium-grain white rice
• 1 small head of cabbage, chopped

Directions

Press down COOK switch. Spray bottom of pot with non-stick vegetable spray. Add ground meat, sausage and chopped vegetables, except cabbage. Cover and allow to cook for about 10 minutes.

Remove lid and continue to cook ingredients, browning the ground meat and sausage, and sauteing the vegetables. Add seasonings, and then stir. Continue to cook until the meat is browned and the vegetables are cooked down. Add diced tomatoes, water, rice, and then stir and add cabbage.

Cover and cook until the meal is cooked and the COOK switch pops up to WARM mode. Let it stand, covered, for 10 minutes before serving. Remove lid. Stir all ingredients together and serve.
